The 12 days of a Berkmann Christmas (Days 4, 5 and 6)

We are into week 2 of our 12 days of a Berkmann Christmas already, we’re starting to feel festive here at Berkmann,
the trade is busy with Christmas parties and we’re planning some exciting things for the new year! But before we
get too ahead of ourselves, find out who is behind doors 4, 5 and 6 of the Berkmann Advent Calendar…


Tom Payne, Senior Supply Planner


On the fourth day of Christmas, Tom Payne, senior supply planner, is behind the advent door
so we asked him what is tradition for him and his family?

We open one present on Christmas Eve to get the fun started. A glass of Champagne (Drappier of course)
to start Christmas Day with breakfast, the rest of the day is a continuous stream of good food, great wine
and lots of fun with the family…punctuated by one mandatory walk in the afternoon to prevent cabin fever!


What is your favourite food to eat at Christmas?

I’m a traditionalist when it comes to Christmas day food, I love Turkey with the trimmings and of course
trying to sneak as many pigs in blankets on my plate as possible.


And what would be your ideal wine choice?

Guado al Tasso (code: 560366) from Antinori would be the perfect drop for Christmas Day!

What is tradition in your household at Christmas?

In my family, the main Christmas celebrations are on the 24th of December. Usually, we have a light dinner with traditional
Tuscan crostini, cheeses, charcuterie, and tortellini in broth. After dinner we play Bingo, and we exchange gifts at Midnight!


What is your favourite Christmas food?

I love my Mum’s Tagliatelle al Ragù and it wouldn’t be Christmas without Panettone with Chantilly cream.


And which wine would you choose to drink?

I would pick Calafuria (code: 550160) from Tormaresca, it’s never too cold for rosé and this one is a ‘rosé the Italian way’.

What is tradition for your household at Christmas?

It all depends on who’s hosting but it’s always about the food and drink and enjoying it all together. If I’m cooking,
I do cheekily request a glass of Champagne as soon as I wake up…Slainte! (Cheers in Scotland)


What is your favourite Christmas food?

Very difficult to pick a particular favourite but my other half does make a delicious salmon rillette that we enjoy
as canapés, I also cannot resist ‘pigs in blankets’!


What wine would you pick to drink on Christmas day?

Champagne Drappier all day! But when we crack into the still whites, there will almost certainly be a Jean-Marc
Brocard Chablis (code: 212027) on the dining table.
